These tasty lamb kabobs make for a quick and healthy meal. Marinated in onions, garlic etc, the kabobs are served on a bed of pilaf.

Ingredients:
6 lbs. Lamb
1/3 cup Olive oil
1 teaspoon Lemon rind
1/3 cup Lemon juice
1 no. Onion
2 nos. Garlic cloves
1 tablespoon Coriander
1 teaspoon Red chilli powder
Preparation:
Chop the leg of lamb into bitesized pieces. Grate the lemon rind, chop the onion, garlic and coriander fine.
Combine the ingredients to form a marinade for the lamb.Marinade the lamb chunks and keep in the fridge overnight.
Thread lamb pieces onto skewers and barbecue the kebabs, brushing with left over marinade until tender. Serve with mint chutney or onions, mint and lemon wedges.
